Apple Oatmeal Pancakes

This has been my fave breakfast lately. I tend to get addicted to one thing, then move on.

Blend up 1 egg, half a cup of oats, quater cup applesauce until it’s a smooth paste.

Heat up your fry pan, I use coconut oil but you an use whatever, butter, spray oil, whatever you choose to cook with. Make a couple of small pancakes, using about 2 tablespoons of the batter per pancake. Cook about a minute and a half each side, flipping them once. Serve drizzled with a little agave syrup.

Enjoy, these little babies should keep you satisfied all morning, and feel like a real treat while still being good for you.

  1. Yes, sounds good! I am exactly the same way – Finding one thing to eat for a few days and sticking to it. It gives you something exciting to look forward to in the mornings that you know is healthy and tasty. Plus, most recipes you can smother a little almond butter on so it gives a good excuse for doing that too! 🙂
